I bought myself a dedicated birding camera exactly 1 year ago. Actually I bought a coolpix superzoom 1st, but within a few weeks decided I needed something better. After much research, I settled on what I decided was a good basic birding camera and lens; Canon Mark 7 body (lightly used) and a new Canon 100-400 zoom lens. My brother is a fairly serious bird photographer/blogger in N. Carolina, and he uses a Canon 400mm lens (non zoom) with just a basic EOS camera body and takes great pics. I wanted something I could shoot close birds with as well though, so the zoom is better for that, although focus is slightly slower. All in all its a great rig and if I wanted to take photos of birds and post them on a blog or website to share, then its exactly what I would want.
However, I have decided its not what I want to do. It is a fairly heavy thing to carry around, and I never use my binoculars anymore, which I miss. You will get the same magnification through this set-up as you will through your bins, so there is no need for the bins, but inevitably you will end up screwing around with ISO and shutter speed and all kinds of other complicated photography stuff rather than getting a good solid view of the bird through binoculars, which I have decided is a shame and a little stressful.
If you are looking for professional quality beautiful images and have the time and patience to spend, then you can't beat the Canon 100-400 lens with a Canon Mark 7 body. Mine is for sale. I would be happy to meet you and we could go over it and I can show you some images I've taken over the last year in the Bahamas, Costa Rica, and Arizona.
